Cake in Jars

Ingredients

    For Cake:
  • 1½ Cups Gluten Free Baking Flour
  • 1/3 Cup Powdered Milk
  • ¼ Teaspoon Salt
  • 2 Teaspoons Baking Powder
  • 3 Egg Whites
  • ¾ Cup Milk (at room temperature)
  • ¾ Teaspoon Vanilla Extract
  • 5 Tablespoons Unsalted Butter
  • ½ Cup Stevia
  • For Frosting:
  • 8 Ounces Cream Cheese
  • 4 Tablespoons Unsalted Butter, Melted
  • ¼ Cup Stevia
  • 1 Teaspoon Vanilla Extract

Directions

  1. Preheat the oven to 350°F.
  2. Lightly grease 12 8oz canning jars, place on a baking sheet.
  3. Whisk together the first 4 ingredients.
  4. Whisk together the egg whites, milk and flavors.
  5. Beat together the butter and sugar until the mixture is light and fluffy.
  6. Add the dry ingredients in three parts, alternating with the wet ingredients, mixing until combined.
  7. Divide the batter equally among the jars. Bake for 24 to 27 minutes.
  8. Transfer jars to cooling rack to cool completely.
