Classic Cheesecake
Ingredients
- 1½ Cups Ground Pecans
- ½ Cup Stevia
- 1½ Teaspoons Cinnamon
- 6 Tablespoons Butter
- 1 Egg, Lightly Beaten
- 1 Teaspoon Vanilla Extract
- 16 Ounces Cream Cheese
- ¾ Cup Sour Cream
- ½ Cup Stevia
- 3 Eggs
- Dash of Salt
- 1 Small Lemon, Juiced
- 1 Tablespoon Lemon Zest
- 2 Teaspoons Vanilla Extract

Directions
- Preheat oven to 325°F.
- Combine the ground pecans, sweetener and cinnamon in a large bowl.
- Stir in melted butter, egg, and vanilla.
- Press the crumb mixture into the bottom and up the sides of a 10” pie pan.
- Combine the cream cheese, sour cream, Stevia and salt in a bowl.
- Using an electric mixer, beat at low speed to blend.
- Add the eggs, lemon juice, lemon zest and vanilla.
- Beat at medium for 1 minute.
- Pour the filling into the crust.
- Bake for 50 minutes.
- add ½ cup cocoa powder and toping with chocolate or substitute the lemon juice and zest for lime and top with fresh berries and mint leaves.
