Butternut Squash Slaw
Ingredients
- 1 tsp Liquid Stevia or 2 TBSP Honey
- 2 TBSP EVOO
- 3 TBSP Sherry Vinegar
- 1 lb Butternut squash, peeled and grated
- 1 bunch Flat-leaf parsley, leaves chopped
- 2 TBSP Dried, chopped cherries
- ¼ cup Sunflower seeds, toasted
- Salt and pepper to taste
Directions
- Dressing - whisk together the stevia/honey, EVOO and vinegar in a bowl, set aside.
- Combine all other ingredients in a bowl; mix together.
- Drizzle dressing over slaw.
- Chill in refrigerator a minimum 30 minutes before serving.
