Grain Bowl Mason Jar Salad
Ingredients
- 1/2 cup Quinoa
- ¼ cup pumpkin seeds
- 4 oz. snap peas
- 4 oz. snow peas
- 4 oz. broccoli
- Fresh mint
- Fresh dill
- 1 lemon & zest
- 1 TBSP honey or .5 tsp liquid stevia
- 1 TBSP Dijon mustard
- ½ cup feta cheese
- 2 TBSP extra virgin olive oil
Directions
- Add all ingredients in the following order to the mason jar. Quinoa, pumpkin seeds, broccoli, snow peas, snap peas, feta cheese, mint and dill.
- Make the vinaigrette. In a small mason jar combine the honey/stevia, mustard, 1 TBSP lemon zest and juice, and 2 TBSP extra virgin olive oil
- Enjoy.
