Fresh Basil Salad

Ingredients

  • 1.5 cups spinach
  • .5 cup broccoli, chopped
  • 3 hard boiled eggs
  • 1 TBSP slivered almonds
  • A handful of fresh basil leaves
  • Dressing
  • .25 cup EVOO
  • .25 cup Balsamic vinegar
  • 3 garlic cloves
  • 1 TBSP Stevia
  • .25 cup Parmesan cheese, grated

Directions

  1. Add spinach to a large salad bowl.
  2. Chop broccoli, and hard-boiled eggs and add to salad bowl.
  3. Sprinkle with slivered almonds and fresh basil leaves.
  4. Top with dressing or simply try half a squeezed lemon and olive oil.
  5. Enjoy.
