Portobello Baked Eggs
Ingredients
- 4 Portobello mushroom caps
- 4 TBSP soft goat cheese
- 4 TBSP sundried tomatoes
- 4 large eggs
- Salt & Pepper to taste
- Basil (optional)
Directions
- Preheat oven to 400 degrees.
- Remove steams from mushrooms and scoop out gills.
- In a small bowl combine eggs, cheese and tomatoes. Whisk until combined.
- Pour into mushroom caps.
- Top with basil.
- Bake for 15-20 minutes
