Portobello Baked Eggs

Ingredients

  • 4 Portobello mushroom caps
  • 4 TBSP soft goat cheese
  • 4 TBSP sundried tomatoes
  • 4 large eggs
  • Salt & Pepper to taste
  • Basil (optional)

Directions

  1. Preheat oven to 400 degrees.
  2. Remove steams from mushrooms and scoop out gills.
  3. In a small bowl combine eggs, cheese and tomatoes. Whisk until combined.
  4. Pour into mushroom caps.
  5. Top with basil.
  6. Bake for 15-20 minutes
