Sunset Fruit Compote
Ingredients
- 10 Cups Assorted Fresh or Frozen Fruit
- 2 Cups Water
- 1 Cup Fresh Mint Leaves
- 1/3 Cup Honey
- 6 Ounces Lemon Juice
Directions
- In a medium saucepan combine water, mint and honey. Bring mixture to a boil. Reduce heat, cover and simmer for 10 minutes.
- Strain into a medium mixing bowl. Discard mint leaves. Stir in lemon.
- Allow to cool.
- Pour mixture over fruit.
- Cover and chill until needed, up to 8 hours.
- Toss before serving.
- Sprinkle with fresh mint leaves.
