Tomato, basil, and shrimp pasta
Ingredients
- 4 whole tomatoes
- 1 onion, diced
- 2 cloves of garlic, chopped
- 3 TBSP EVOO
- ¼ tsp red pepper flakes
- 12 Large Shrimp
- .5 cup fresh basil, chopped
- 1 box brown rice pasta
- 1 cup non-fat chicken broth
Directions
- Score and core fresh tomatoes. Boil 5 minutes and peel off skin. Dice tomatoes
- Heat EVOO in a sauce pan. Sautee onion, add garlic, red pepper, diced tomatoes and add chicken broth.
- Simmer and reduce 10 minutes.
- Add Shrimp cook for 4 minutes.
- Add fresh basil and pasta.
- Toss, serve and enjoy.
